Very repeated question, please try to search these forums first. Anyway, any text you edit/remove from admin->Language manager, under edit language, you can search also for specific text or variable name from the language manager. As for customizations, you do all customizations from the admin->template editor and admin->class editor, these where all html is located, so to customize everything:
Language Manager->Edit Language Template Editor Class Editor

I have opened the Template - Sell\

There is no list of the payment methods that I can find... thus I can't remove or add those I want...\

so I opened the Language editor and selected - Sell and again, there is no list of the payment methods I can add or remove from...\

So, does anyone have a clue exactly where this list is ?

i found it buy searching "echeck" in the language manager and clicking on the general link.\
\
